- 1 cup buttermilk

- 3 tbsp honey
For the Honey Butter Glaze:
- 1/4 cup unsalted butter, melted
- 2 tbsp honey

- Prepare the Batter:
- Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, combine the buttermilk, eggs, melted butter, and honey.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Bake the Poppers:
- Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
- Bake for 12–15 minutes or until golden and a toothpick inserted into the center comes out clean.
- Glaze the Poppers:
- In a small bowl, whisk together the melted butter and honey for the glaze.
- Brush the warm cornbread poppers with the honey butter glaze.
- Serve:
- Serve warm as a side dish, appetizer, or snack.
Notes
- These poppers can be made ahead of time and reheated for serving.
- For a savory twist, add chopped jalapeños or shredded cheddar cheese to the batter.
