Ingredients

  • 4 cups mixed greens (baby spinach or arugula)
  • 1 cup fresh strawberries, sliced
  • 1 medium cucumber, diced
  • ΒΌ cup red onion, thinly sliced
  • Β½ cup goat cheese, crumbled
  • ΒΌ cup pecan halves, toasted
  • ΒΌ cup balsamic vinaigrette

Instructions

  1. Rinse mixed greens under cold water and dry using a salad spinner.
  2. Crumble goat cheese into small pieces.
  3. Hull and slice strawberries into thin pieces.
  4. Dice cucumber into half-moon shapes.
  5. Soak sliced red onion in cold water for about 10 minutes to mellow its flavor.
  6. In a large bowl, gently combine all ingredients and drizzle with balsamic vinaigrette just before serving.
