  • 4 skinless salmon fillets (about 6 oz each)
  • 1 cup whole-milk ricotta cheese
  • ½ cup fresh basil leaves, chopped
  • Zest of 1 organic lemon
  • 8 asparagus spears
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with parchment paper or cooking spray.
  2. Blanch asparagus in boiling salted water for 2 minutes, then transfer to ice water.
  3. In a bowl, mix ricotta, lemon zest, basil, salt, and pepper until smooth.
  4. Lay out salmon fillets; place the ricotta mixture on each and add an asparagus spear at one end. Roll up tightly from the filling end.
  5. Place seam-side down in the baking dish, drizzle with olive oil, and season with salt and pepper.
  6. Bake for 15-20 minutes until cooked through.
