- 1 cup granulated sugar
- 2 cups mixed dried fruits (raisins, currants, sultanas)

- 4 oz marzipan, rolled out
- 4 large eggs, room temperature
- 2 tsp baking powder
- Zest of 1 lemon
- Zest of 1 orange
- 1/4 cup whole milk
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 5 minutes).
- Beat in eggs one at a time, adding lemon and orange zest along with mixed spices.
- Gradually fold in flour mixed with baking powder and then add dried fruits.
- Pour half of the batter into the prepared pan. Roll out the marzipan flat and place it on top before adding the remaining batter.
- Bake for approximately 1 hour or until a toothpick comes out clean. Allow cooling before decorating.
