  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups mixed dried fruits (raisins, currants, sultanas)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 4 oz marzipan, rolled out
  • 4 large eggs, room temperature
  • 2 tsp baking powder
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1/4 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy (about 5 minutes).
  3. Beat in eggs one at a time, adding lemon and orange zest along with mixed spices.
  4. Gradually fold in flour mixed with baking powder and then add dried fruits.
  5. Pour half of the batter into the prepared pan. Roll out the marzipan flat and place it on top before adding the remaining batter.
  6. Bake for approximately 1 hour or until a toothpick comes out clean. Allow cooling before decorating.
