  • 4 bone-in, skin-on chicken thighs

  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels.
  2. In a large oven-safe skillet over medium-high heat, add olive oil and sear chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for an additional 3 minutes.
  3. Remove chicken and sauté minced garlic in the same skillet for about 30 seconds until fragrant. Stir in Dijon mustard and combine well.
  4. Pour in heavy cream and chicken broth, stirring until mixed; bring to a gentle simmer.
  5. Return chicken to skillet, season with salt and pepper, and transfer to the oven. Bake for 25-30 minutes or until cooked through.
