- 4 slices thick-cut bacon
- 2 medium onions, chopped
- 3 medium starchy potatoes (about 1 lb), diced
- 2 medium carrots, sliced
- 4 cups chicken stock (low-sodium)
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 tsp fresh parsley (or 1 tsp dried)
- Freshly cracked black pepper to taste
Instructions
- In a large pot over medium heat, cook the bacon until crisp. Remove and set aside. In the same pot, brown the sausages until golden.
- Add chopped onions to the pot with drippings and sauté until soft.
- Stir in diced potatoes and sliced carrots; mix well.
- Pour in chicken stock until it covers vegetables by about an inch. Add thyme, parsley, and black pepper.
- Bring to a gentle boil. Reduce heat to low, cover, and let simmer for at least 40 minutes until vegetables are tender.
- Serve hot in bowls topped with crumbled bacon and crusty bread.
