Ingredients

  • 4 pork sausages (about 12 oz)
  • 4 slices thick-cut bacon
  • 2 medium onions, chopped
  • 3 medium starchy potatoes (about 1 lb), diced
  • 2 medium carrots, sliced
  • 4 cups chicken stock (low-sodium)
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh parsley (or 1 tsp dried)
  • Freshly cracked black pepper to taste

Instructions

  1. In a large pot over medium heat, cook the bacon until crisp. Remove and set aside. In the same pot, brown the sausages until golden.
  2. Add chopped onions to the pot with drippings and sauté until soft.
  3. Stir in diced potatoes and sliced carrots; mix well.
  4. Pour in chicken stock until it covers vegetables by about an inch. Add thyme, parsley, and black pepper.
  5. Bring to a gentle boil. Reduce heat to low, cover, and let simmer for at least 40 minutes until vegetables are tender.
  6. Serve hot in bowls topped with crumbled bacon and crusty bread.
