- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 medium carrots, chopped
- 1 cup frozen peas
- 2 cups low-sodium chicken broth
- 1 cup cream (or half-and-half)
- 1 sheet puff pastry (or pie crust)
- 1 tsp dried thyme
- 1 tsp fresh parsley, chopped
- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a round baking dish.
- In a large skillet over medium heat, melt butter. Sauté diced onions and minced garlic until translucent.
- Add chopped carrots and cook until slightly softened. Stir in diced chicken breast and sauté until no longer pink (about 5-7 minutes).
- Pour in chicken broth and cream while stirring constantly; add thyme, parsley, salt, and pepper. Simmer for about 5 minutes until thickened.
- Pour the mixture into the prepared baking dish. Roll out the puff pastry over the top and cut slits for steam escape.
- Bake for 30-35 minutes or until golden brown. Once baked, let cool slightly before serving.
