  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 1 cup frozen peas
  • 2 cups low-sodium chicken broth
  • 1 cup cream (or half-and-half)
  • 1 sheet puff pastry (or pie crust)
  • 1 tsp dried thyme
  • 1 tsp fresh parsley, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a round baking dish.
  2. In a large skillet over medium heat, melt butter. Sauté diced onions and minced garlic until translucent.
  3. Add chopped carrots and cook until slightly softened. Stir in diced chicken breast and sauté until no longer pink (about 5-7 minutes).
  4. Pour in chicken broth and cream while stirring constantly; add thyme, parsley, salt, and pepper. Simmer for about 5 minutes until thickened.
  5. Pour the mixture into the prepared baking dish. Roll out the puff pastry over the top and cut slits for steam escape.
  6. Bake for 30-35 minutes or until golden brown. Once baked, let cool slightly before serving.
