  • Salt & pepper to taste
  • ½ cup vegetable oil (for frying)

Instructions

  3. In another bowl, whisk together eggs and chopped green onions; then combine with dry ingredients along with fresh corn. Stir gently until just mixed.

  5. Drop tablespoons of batter into hot oil; fry until golden brown on each side (about 3-4 minutes per side).
