Description
Quick and Easy Cowboy Butter Chicken Linguine is a creamy, comforting dish that brings together tender chicken, garlic, and rich butter in just 30 minutes—perfect for busy weeknights.
Ingredients
Scale
- 2 boneless, skinless chicken breasts (1 lb)
- 8 oz fettuccine pasta
- 4 tbsp unsalted butter
- 4 cloves fresh garlic, minced
- 1 tsp dried Italian herbs (oregano and basil)
- 1/2 cup grated Parmesan cheese
- Salt & pepper to taste
Instructions
- 1. Cook the Pasta: Boil salted water in a large pot. Add fettuccine and cook until al dente, about 8-10 minutes. Drain and set aside.
- 2. Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Season chicken with salt and pepper, then cook until golden brown on both sides (about 6-7 minutes per side). Remove from skillet and let rest.
- 3. Add Garlic and Herbs: In the same skillet, add the remaining butter, minced garlic, and dried herbs. Sauté until fragrant (about 1 minute).
- 4. Create the Sauce: Pour in a splash of reserved pasta water to create a sauce base. Stir well to scrape up browned bits from the skillet.
- 5. Toss Everything Together: Slice the rested chicken and return it to the skillet along with drained fettuccine. Toss until pasta is evenly coated in sauce.
- 6. Serve & Enjoy: Plate hot, garnished with freshly grated Parmesan cheese.
