Description

Indulge in this vibrant Mediterranean baked fish, where fresh herbs and zesty lemon come together for a delightful culinary experience that transports you straight to the coast.


Ingredients

  • 4 fresh white fish fillets (cod or halibut)
  • 4 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Place fish fillets in the dish, drizzle with olive oil, sprinkle salt and pepper, and add lemon juice.
  4. Top with minced garlic, cherry tomatoes, and chopped herbs.
  5. Bake for 15-20 minutes until the fish flakes easily with a fork.
  6. Finish with extra lemon juice and garnish with fresh herbs before serving.
