  • 8 fresh jalapeños
  • 1 cup sweet corn (fresh or frozen)
  • 8 oz cream cheese (softened)
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp chili powder
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup chopped cilantro

Instructions

  1. Preheat your grill to medium-high heat (375°F). Cut each jalapeño in half lengthwise and remove the seeds.
  2. In a bowl, combine softened cream cheese, sweet corn, shredded cheddar, lime juice, chopped cilantro, and chili powder until well mixed.
  3. Generously fill each jalapeño half with the cheesy mixture.
  4. Place stuffed jalapeños on the grill, cut side up. Close the lid and cook for 10-12 minutes until golden brown and bubbly.
  5. Carefully remove from the grill and let cool for a minute before serving.
