  • 8 oz penne pasta
  • 2 cups cherry tomatoes
  • 8 oz block feta cheese
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss cherry tomatoes with olive oil, salt, and pepper. Place the block of feta cheese in the center.
  3. Sprinkle minced garlic over the tomatoes and feta. Roast for 25-30 minutes until tomatoes burst.
  4. While roasting, cook penne according to package instructions until al dente. Reserve some pasta water.
  5. Combine roasted mixture with drained pasta in a large bowl. Add reserved pasta water gradually until creamy.
  6. Toss in torn basil leaves before serving warm.
