- 1 lb boneless chicken thighs, cut into 1-inch cubes
- 1 red bell pepper, cut into bite-sized pieces
- 1 yellow bell pepper, cut into bite-sized pieces
- 1 green bell pepper, cut into bite-sized pieces
- 1 medium zucchini, sliced into thick rounds
- 1 medium red onion, cut into wedges
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 1 tsp garlic powder
- ½ tsp red pepper flakes (adjust to taste)
Instructions
- In a large bowl, combine soy sauce, honey, garlic powder, and red pepper flakes. Mix well.
- Add chicken pieces to the marinade and let them soak for at least 30 minutes (up to overnight in the refrigerator).
- While the chicken marinates, prepare the vegetables by cutting them as described above.
- Thread marinated chicken and vegetables onto soaked skewers alternately.
- Preheat your grill to medium-high heat (about 400°F/200°C). Grill kabobs for 10-12 minutes, turning occasionally until chicken is cooked through.
