  • 1 lb boneless chicken thighs, cut into 1-inch cubes
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 yellow bell pepper, cut into bite-sized pieces
  • 1 green bell pepper, cut into bite-sized pieces
  • 1 medium zucchini, sliced into thick rounds
  • 1 medium red onion, cut into wedges
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp red pepper flakes (adjust to taste)

Instructions

  1. In a large bowl, combine soy sauce, honey, garlic powder, and red pepper flakes. Mix well.
  2. Add chicken pieces to the marinade and let them soak for at least 30 minutes (up to overnight in the refrigerator).
  3. While the chicken marinates, prepare the vegetables by cutting them as described above.
  4. Thread marinated chicken and vegetables onto soaked skewers alternately.
  5. Preheat your grill to medium-high heat (about 400°F/200°C). Grill kabobs for 10-12 minutes, turning occasionally until chicken is cooked through.
