  • 3 cloves fresh garlic, minced
  • 1 cup white or brown rice
  • 1 cup assorted bell peppers, sliced (red, yellow, green)
  • 1 medium cucumber, thinly sliced
  • 3 tbsp Sriracha sauce (adjust for spice level)
  • ½ cup mayonnaise
  • Juice of 1 lime
  • 2 green onions, chopped (for garnish)

Instructions

  1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat oil in a skillet over medium heat. Cook the chicken until golden brown and juices run clear, about 6-8 minutes.
  3. In a bowl, whisk together mayonnaise, Sriracha, and lime juice until smooth. Adjust seasoning as desired.
  4. Sauté sliced bell peppers in the same skillet until just tender (3-4 minutes).
  5. Return cooked chicken to the skillet and add the sauce. Mix well and heat through for about 2 minutes.
  6. Serve over cooked rice and garnish with chopped green onions.
