Instructions
- Heat vegetable broth in a saucepan over low heat to keep warm.
- In a large skillet, sauté chopped onion in olive oil until translucent. Add minced garlic and cook until fragrant.
- Stir in Arborio rice and toast for 2 minutes until slightly translucent.
- Gradually add warm broth, one ladleful at a time, stirring continuously until absorbed before adding more.
- Halfway through cooking (about 10 minutes), stir in fresh peas and continue cooking until rice is al dente (18-20 minutes total).
- Remove from heat and mix in butter and freshly grated Parmesan cheese until smooth. Serve immediately with lemon zest on top.
