  • 1/2 cup unsalted butter (divided)
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste
  • 1/2 cup chicken broth

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, minced garlic, grated Parmesan, egg, salt, and pepper; mix just until combined.
  2. Shape mixture into golf-ball-sized meatballs and place on a parchment-lined baking sheet.
  3. In a skillet over medium-high heat, melt half of the butter and sear meatballs until browned on all sides (about 8-10 minutes). Ensure they reach an internal temperature of 160°F.
  4. Remove meatballs; in the same skillet, melt remaining butter and sauté garlic until fragrant. Return meatballs to the skillet with chicken broth to deglaze.
  5. Cook linguine according to package instructions until al dente; drain and add directly to the skillet with meatballs.
  6. Toss everything together until coated in the sauce; garnish with parsley before serving.
