Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers (red, yellow, or green), sliced
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter, melted
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 8 tortillas (flour or corn)
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine melted butter, minced garlic, cumin, and chili powder.
  3. On a sheet pan, toss shrimp and sliced veggies with the garlic butter mixture until well coated.
  4. Spread the mixture evenly on the pan and bake for 12-15 minutes until shrimp are pink and veggies are tender.
