  • 1 cup full-fat coconut milk
  • 3 tbsp flaxseed meal + 9 tbsp water (flaxseed egg)
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ½ cup unsweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Prepare the flaxseed egg by mixing flaxseed meal with water; let sit for about five minutes.
  3. In a large bowl, whisk together gluten-free flour, coconut sugar, baking powder, and shredded coconut.
  4. Add the coconut milk, vanilla extract, and flaxseed mixture to dry ingredients; mix until just combined.
  5. Fill each cupcake liner two-thirds full with batter.
  6. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
