Ingredients

  • 1 lb flank or sirloin steak
  • 1/4 cup balsamic vinegar
  • 4 oz gorgonzola cheese, crumbled
  • 1 cup fresh or grilled corn kernels
  • 4 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the steak in balsamic vinegar mixed with salt and pepper for at least 30 minutes.
  2. Preheat grill to medium-high heat. Grill the marinated steak for 5-7 minutes per side until cooked to desired doneness. Let rest before slicing.
  3. Optionally, grill fresh corn until slightly charred during the last few minutes of the steak cooking.
  4. In a large bowl, toss mixed greens with cherry tomatoes.
  5. Add grilled corn kernels and sprinkle gorgonzola cheese over the salad base.
  6. Slice rested steak against the grain into thin strips and place on top of the salad before drizzling with olive oil and additional balsamic vinegar.
