Ingredients

  • 3–4 boneless, skinless chicken breasts
  • 1 head fresh romaine lettuce, chopped
  • Β½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil (for chicken)
  • 1 tsp garlic powder (for croutons)
  • 1 tbsp Dijon mustard
  • 2 tbsp freshly squeezed lemon juice
  • 3 cups stale bread, cubed (for croutons)
  • Salt and pepper to taste

Instructions

  1. Wash and chop the romaine lettuce into bite-sized pieces; set aside in a large bowl.
  2. Preheat the grill to medium-high heat. Season chicken breasts with salt, pepper, and 2 tbsp olive oil. Grill for 6-8 minutes per side until fully cooked (internal temperature of 165Β°F).
  3. For the croutons, toss stale bread cubes in olive oil mixed with garlic powder, salt, and pepper. Bake on a baking sheet at 375Β°F for about 15 minutes until golden brown.
  4. In a bowl, whisk together Dijon mustard, lemon juice, olive oil, salt, pepper, and Parmesan cheese until smooth.
  5. Add grilled chicken slices and homemade croutons to the bowl of romaine lettuce. Drizzle with dressing and toss gently until well coated.
  6. Serve immediately on chilled plates garnished with additional Parmesan if desired.
