  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup salsa verde (fresh or store-bought)
  • 1 cup shredded pepper jack cheese
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken breasts, salsa verde, olive oil, lime juice, garlic powder, salt, and pepper. Toss until well-coated. Let marinate for at least 30 minutes.
  2. Heat grill to medium-high.
  3. Place marinated chicken on the grill and cook each side for about 6-7 minutes until the internal temperature reaches 165°F (75°C).
  4. In the last few minutes of grilling, sprinkle shredded pepper jack cheese over each breast and close the lid until melted.
  5. Remove from grill and let rest for 5 minutes before slicing. Serve with extra salsa if desired.
