- 4 large bell peppers (any color)
- 1 cup cooked rice (white or brown)
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 cup diced tomatoes (drained)
- 1/2 cup shredded cheddar or Monterey Jack cheese (plus extra for topping)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh cilantro (optional garnish)
Instructions
- Prepare the Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the peppers with olive oil.
- Make the Filling:
- In a bowl, combine cooked rice, black beans, corn, diced tomatoes, shredded cheese, chili powder, cumin, salt, and pepper. Mix well.
- Stuff the Peppers:
- Fill each pepper with the prepared mixture, packing it tightly. Sprinkle extra cheese on top.
- Grill the Peppers:
- Preheat the grill to medium heat. Place the stuffed peppers directly on the grill grates or in a grill-safe pan. Cover and cook for 10–15 minutes, until the peppers are tender and the cheese is melted.
- Serve:
- Remove from the grill, garnish with fresh cilantro, and serve hot. Pair with a side of salad or garlic bread for a complete meal.
Notes
- For added flavor, mix in cooked ground beef, chicken, or sausage to the filling.
- To make it vegan, use plant-based cheese and skip any meat additions.
- Can be prepared in the oven at 375°F for 20–25 minutes if grilling isn’t an option.
