  • Zucchini
  • Ground turkey
  • Taco seasoning

  • Onion

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Add ground turkey and cook until browned.
  4. Stir in taco seasoning and diced tomatoes; cook for an additional 5 minutes.
  5. Halve zucchinis lengthwise and scoop out some flesh to create boats.
  6. Fill each zucchini half with the turkey mixture and top with shredded cheese.
