  • 2 tsp active dry yeast
  • 1 ½ cups warm water (110°F/43°C)
  • ¼ cup extra virgin olive oil
  • 1 cup Gruyère cheese, shredded
  • 2 tbsp fresh thyme leaves
  • 2 tsp kosher salt
  • 1 tsp sugar

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast; let sit for about 5 minutes until frothy.
  2. Stir in olive oil and salt. Gradually add flour while mixing to form a shaggy dough.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm spot until doubled in size (1-2 hours).
  5. After rising, punch down the dough and spread it onto an oiled baking sheet, creating dimples with your fingers.
  6. Top with shredded Gruyère cheese and fresh thyme. Cover and let rise again for 30 minutes while preheating the oven to 425°F (220°C).
  7. Bake for 20-25 minutes until golden brown. Cool slightly before slicing.
