Ingredients

  • 1 can Spam (12 oz)
  • 2 cups short-grain sushi rice
  • 3 sheets sushi nori seaweed
  • 1/3 cup rice vinegar
  • 1 tablespoon sugar
  • Pinch of salt
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes).
  2. In a bowl, mix cooked rice with rice vinegar, sugar, and salt.
  3. Slice Spam into eight rectangles and fry in a skillet over medium heat until golden brown (4-5 minutes per side).
  4. Lay a sheet of nori on a clean surface. Spread about 1/3 cup seasoned rice on the nori.
  5. Place one slice of Spam on top of the rice and roll tightly; seal with a bit of water.
  6. Let sit seam-side down for five minutes before slicing into bite-sized pieces.
