- 1 lb boneless chicken breast
- 6 cups low-sodium vegetable broth
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 can (15 oz) black beans, rinsed and drained
- 2 cups frozen spinach or kale
- Juice of 1 lemon
Instructions
- In a large pot, heat 1 tbsp olive oil over medium heat. Add diced onion and sautΓ© until translucent.
- Add whole chicken breasts to the pot and sear until golden brown on both sides.
- Pour in vegetable broth, scraping any bits from the bottom of the pot. Bring to a gentle simmer.
- Stir in chopped carrots, celery, minced garlic, thyme, oregano, black beans, and frozen greens. Simmer for about 20 minutes until veggies are tender.
- Remove cooked chicken breasts from the pot and shred them using two forks; return shredded chicken to the soup along with lemon juice.
