  • 1 lb lean ground beef (80/20)
  • 4 large flour tortillas
  • 1 cup chopped iceberg lettuce
  • 1 cup shredded sharp cheddar cheese
  • ½ cup special sauce (mix of ¼ cup mayonnaise, 2 tbsp ketchup, 2 tbsp relish)
  • ½ cup finely chopped onions (red or yellow)
  • ½ cup sliced dill pickles

Instructions

  1. Brown the ground beef in a non-stick skillet over medium heat for about 6-8 minutes; drain excess fat.
  2. Add finely chopped onions to the skillet and cook until translucent (about 3 minutes). Season with salt and pepper.
  3. In a small bowl, combine mayonnaise, ketchup, relish, and mustard to create the special sauce.
  4. Lay each tortilla flat and spread a layer of special sauce. Add beef mixture, cheese, lettuce, and pickles.
  5. Fold the sides of the tortilla over the filling, then roll tightly. Secure with toothpicks if necessary.
  6. Optionally grill each wrap in the skillet for 2 minutes per side until golden brown. Serve warm with extra sauce.
