  • 4 salmon fillets (about 6 oz each)
  • 1/4 cup honey
  • 3 tbsp Sriracha sauce
  • 2 garlic cloves, minced
  • 2 cups cooked jasmine or brown rice
  • 1 cup bell peppers (sliced)
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • Salt to taste
  • 1 tbsp toasted sesame seeds
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season salmon fillets with salt and pepper.
  3. In a bowl, whisk together honey, Sriracha sauce, and minced garlic. Adjust spice level as desired.
  4. Place salmon on the baking sheet and brush generously with the honey Sriracha mixture.
  5. Scatter bell peppers and broccoli around the salmon; drizzle with olive oil and sprinkle with salt.
  6. Bake for 15-20 minutes until salmon flakes easily with a fork.
  7. Cook rice according to package instructions; fluff before serving.
  8. Assemble bowls with rice at the bottom, topped with salmon and veggies, then garnish with sesame seeds and green onions.
