Ingredients

Scale
  • 4 cups curly kale, chopped
  • 1 cup dried cranberries
  • 1 cup shelled pistachios, lightly salted
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Rinse kale under cold water, shake off excess moisture, and pat dry. Remove tough stems.
  2. Chop or tear kale into bite-sized pieces. In a large bowl, drizzle with 1 tablespoon olive oil and a pinch of salt. Massage the kale for about 2 minutes until softened.
  3. Add cranberries and pistachios to the bowl, mixing gently to combine.
  4. In a small bowl, whisk together remaining olive oil, lemon juice, honey or maple syrup, salt, and pepper until well blended.
  5. Drizzle dressing over the salad right before serving and toss gently.
  6. Serve immediately on a platter or individual plates, garnished with extra pistachios if desired.
