- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 low-carb tortillas
- 1 cup chopped bell peppers (any color)
- 1 small onion, diced
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp garlic powder
- 2 tbsp olive oil
- Sour cream (optional)
Instructions
- Dice the chicken into bite-sized pieces. Heat olive oil in a skillet over medium heat. Add the chicken and season with cumin, paprika, garlic powder, salt, and pepper. Cook until golden brown and internal temperature reaches 165°F (75°C).
- Remove the chicken and add chopped bell peppers and diced onion to the skillet. Sauté until soft, about 5 minutes.
