  • 1 lb boneless chicken thighs
  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp gochujang (Korean chili paste)
  • 2 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp sesame oil
  • Sesame seeds for garnish

Instructions

  1. Cut the chicken thighs into bite-sized pieces and pat dry to ensure crispiness.
  2. In a bowl, mix all-purpose flour, rice flour, cornstarch, salt, and pepper.
  3. Whisk eggs in another bowl. Dip chicken pieces in eggs first, then coat thoroughly in the flour mixture.
  4. Heat oil in a deep skillet to 350°F (175°C). Fry chicken pieces in batches until golden brown (8-10 minutes). Drain on paper towels.
  5. In a saucepan over medium heat, combine soy sauce, gochujang, honey/maple syrup, garlic, ginger, and sesame oil until slightly thickened.
  6. Toss fried chicken in the sauce and garnish with sesame seeds before serving.
