  • 2 lbs lamb shoulder, bone-in, cut into bite-sized pieces
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the lamb with salt and pepper. Chop the vegetables.
  2. In a large pot or Dutch oven over medium-high heat, add olive oil and brown the lamb pieces in batches until golden brown. Remove and set aside.
  3. Sauté onions in the same pot until translucent. Add garlic, carrots, and herbs; stir until combined.
  4. Return the lamb to the pot along with potatoes and pour in enough beef broth to cover all ingredients by about an inch. Bring to a gentle boil, then reduce heat to low.
  5. Cover and let simmer for about two hours, stirring occasionally.
  6. Serve hot in bowls with crusty bread on the side.
