- 9 whole wheat lasagna noodles
- 1 cup part-skim ricotta cheese
- 1 ½ cups fresh mozzarella cheese, shredded
- 2 cups fresh spinach, chopped
- 1 medium zucchini, thinly sliced
- 2 cups marinara sauce (low-sugar)
- ¼ cup grated Parmesan cheese
- 1 large egg
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
- Sauté sliced zucchini in a skillet over medium heat for about 5 minutes until golden brown; season with salt and pepper.
- In a bowl, mix ricotta cheese, beaten egg, half of the mozzarella cheese, spinach, salt, and pepper until well combined.
- Spread a layer of marinara sauce in the baking dish. Layer noodles followed by the ricotta mixture and sautéed zucchini. Repeat layers until all ingredients are used.
- Top the final layer with marinara sauce, remaining mozzarella, and grated Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
- Allow to cool for at least 15 minutes before slicing.
