  • 2 medium sweet potatoes (about 400g)
  • 2 tbsp pure maple syrup (30ml)
  • 1 cup plain Greek yogurt (240g)
  • 1 tsp ground cinnamon (2g)
  • ¼ cup chopped nuts (optional) (30g)
  • ¼ cup dried fruits (optional) (40g)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry sweet potatoes, then place them directly on an oven rack or lined baking sheet.
  3. Roast for about 45 minutes, or until tender when pierced with a fork.
  4. While potatoes roast, prepare toppings by chopping nuts and dried fruits if using.
  5. In a small bowl, mix Greek yogurt with maple syrup and cinnamon.
  6. Once sweet potatoes are done, slice them open, fluff the insides with a fork, and top with the yogurt mixture.
  7. Drizzle with remaining maple syrup and sprinkle optional nuts or fruits.
