Description

Lemon Herb Roasted Chicken is a flavorful, easy-to-make dish infused with zesty lemon and fresh herbs, perfect for family dinners or special occasions.


Ingredients

  • Whole chicken (4-5 pounds)
  • Fresh lemon juice
  • Extra virgin olive oil
  • Fresh thyme, rosemary, and parsley
  • Minced garlic
  • Salt and pepper
  • Lemon zest
  • Optional: Carrots, potatoes, or onions

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, lemon zest, and chopped herbs.
  4. Rub the marinade all over the chicken, ensuring to get under the skin. Marinate for at least 30 minutes.
  5. If using vegetables, chop them and place around the chicken in a roasting pan.
  6. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
