Ingredients
- Whole chicken (4-5 pounds)
- Fresh lemon juice

Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, lemon zest, and chopped herbs.
- Rub the marinade all over the chicken, ensuring to get under the skin. Marinate for at least 30 minutes.
- If using vegetables, chop them and place around the chicken in a roasting pan.
- Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
