  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (room temperature)
  • 4 large eggs
  • ¾ cup Limoncello liqueur
  • Zest and juice of 2 fresh lemons
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease two round 9-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then add Limoncello and lemon juice.
  4. Gradually combine dry ingredients with wet mixture until just blended.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. For the frosting, beat mascarpone cheese, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
  7. Once cooled, frost the top of one cake layer, add the second layer, and frost the entire cake.
