- 2 ripe mangoes, diced
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract

Instructions
- Rinse tapioca pearls under cold water.
- Boil 4 cups of water in a medium saucepan. Add tapioca pearls and cook for about 15 minutes until translucent.
- Drain pearls and return them to the saucepan. Stir in coconut milk and honey/maple syrup over low heat until combined.
