Ingredients

Scale
  • 3 ripe bananas
  • 1/3 cup melted butter or vegetable oil
  • 1/2 cup pure maple syrup
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1/2 tsp ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, mash the bananas until smooth, then stir in melted butter (or oil), maple syrup, and egg until well combined.
  3. In a separate bowl, whisk together flour, baking powder, salt, and optional cinnamon.
  4. Gently fold the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Distribute the batter evenly into muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean. Allow to cool slightly before serving.
