- 1 cup firm cucumbers, sliced
- 1 cup bell peppers (red, yellow, orange), julienned
- 1 cup carrots, thinly sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1 tbsp fresh oregano (or 1 tsp dried)
- 1/2 cup white wine vinegar (or apple cider vinegar)
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash and prepare all vegetables; slice cucumbers, julienne bell peppers, slice carrots, and thinly slice red onion.
- In a bowl, whisk together white wine vinegar, olive oil, salt, pepper, and oregano.
