Ingredients

  • 1 cup firm cucumbers, sliced
  • 1 cup bell peppers (red, yellow, orange), julienned
  • 1 cup carrots, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • 1/2 cup white wine vinegar (or apple cider vinegar)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables; slice cucumbers, julienne bell peppers, slice carrots, and thinly slice red onion.
  2. In a bowl, whisk together white wine vinegar, olive oil, salt, pepper, and oregano.
  3. Combine the veggies in a large bowl and pour the marinade over them. Toss gently until well coated.
  4. Fold in the crumbled feta cheese carefully.
  5. Cover and refrigerate for at least 2 hours to allow flavors to meld.
