  • 1 lb ground beef or turkey
  • 4 cups tortilla chips
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheese (Monterey Jack and Cheddar blend)
  • 2 tsp cumin
  • 2 tsp chili powder
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  3. Stir in diced tomatoes (with juices), black beans, cumin, and chili powder; let simmer for 5 minutes.
  4. In an oven-safe baking dish, layer half of the tortilla chips, half of the meat mixture, and half of the shredded cheese. Repeat layers.
  5. Bake for 20-25 minutes until bubbly and golden.
  6. Let cool for 5 minutes before garnishing with cilantro and serving with sour cream.
