  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp chili powder
  • 3 large eggs
  • 1 cup whole milk (or almond milk)
  • 1 tsp pure vanilla extract
  • ½ cup unsalted butter, softened
  • For frosting: 8 oz cream cheese, softened
  • For frosting: 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round 9-inch cake pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, cinnamon, and chili powder.
  3. In another bowl, beat eggs with milk, melted butter, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Let cakes cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For the frosting, whip cream cheese with powdered sugar until creamy.
  8. Assemble the cake by frosting between layers and covering the top and sides generously.
