  • 1 lb Brussels sprouts (trimmed and halved)
  • 2 tbsp extra virgin olive oil
  • 1/2 cup cotija cheese (crumbled)
  • 1 tsp chili powder
  • 1 lime (juiced)
  • 1/4 cup fresh cilantro (chopped)
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss halved Brussels sprouts with olive oil, chili powder, salt, and pepper until evenly coated.
  3. Spread the sprouts on a baking sheet in a single layer and roast for 20-25 minutes until golden brown and crispy.
  4. Remove from the oven and immediately sprinkle cotija cheese over the hot sprouts; drizzle with fresh lime juice.
  5. Garnish with chopped cilantro before serving.
