  • 3–4 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 4 corn tortillas, cut into strips
  • 2 tsp cumin
  • 2 tsp chili powder
  • Fresh cilantro for garnish

Instructions

  1. Gather all ingredients and finely chop the onions and garlic.
  2. In a large pot over medium heat, add olive oil and sautΓ© onions and garlic until fragrant.
  3. Add chicken breasts and diced tomatoes to the pot. Pour in chicken broth and season with cumin and chili powder.
  4. Bring to a gentle boil, then reduce heat to simmer for 20-25 minutes or until chicken is cooked through.
  5. While simmering, fry tortilla strips in a pan with hot oil until crispy.
  6. Remove chicken from the pot, shred it with two forks, then return it to the soup. Serve in bowls topped with crispy tortilla strips and cilantro.
