Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into each liner.
- Beat softened cream cheese until smooth. Mix in sugar, egg, and vanilla until well blended.
- In another bowl, combine diced apples, brown sugar, cinnamon, and oats.
- Pour cheesecake filling into each crust, about three-quarters full, then top with the apple mixture.
- Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely before refrigerating.
