  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups Granny Smith or Honeycrisp apples (diced)
  • 1 tsp cinnamon
  • 2 tbsp brown sugar
  • 1/4 cup rolled oats
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into each liner.
  3. Beat softened cream cheese until smooth. Mix in sugar, egg, and vanilla until well blended.
  4. In another bowl, combine diced apples, brown sugar, cinnamon, and oats.
  5. Pour cheesecake filling into each crust, about three-quarters full, then top with the apple mixture.
  6. Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely before refrigerating.
