Description

Mini Easter Egg Cheesecake Bites are a delightful, creamy treat topped with colorful chocolate eggs, making them the perfect dessert for your spring celebrations!


Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate eggs

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture firmly into each muffin cup.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, and vanilla, mixing until creamy.
  4. Spoon filling over each crust, leaving some space at the top. Bake for 15-20 minutes until slightly jiggly in the center.
  5. After baking, gently press mini chocolate eggs into each cheesecake bite while warm. Allow to cool completely before serving.
