Description

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp peppermint extract
  • 1 cup powdered sugar (for frosting)
  • 2 tbsp butter (softened for frosting)
  • Green food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix melted butter and granulated sugar until combined. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, sift together cocoa powder and flour. Gradually add this dry mix to the wet ingredients until just combined.
  4. Pour batter into the prepared pan and bake for 25-30 minutes, checking with a toothpick for moist crumbs.
  5. While the brownies cool, beat powdered sugar, softened butter, peppermint extract, and green food coloring until smooth for the frosting.
  6. Once brownies are completely cool, spread the frosting over the top and cut into squares.
