- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 4 large eggs
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 tbsp instant coffee granules
- 1 cup heavy cream
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 425°F (220°C). In a saucepan, heat water and butter until boiling. Stir in flour and mix until smooth.
- Allow the mixture to cool slightly, then add eggs one at a time, mixing until glossy.
- Pipe 4-inch logs onto parchment-lined baking sheets.
- Bake for 25-30 minutes or until golden brown; do not open the oven door during baking.
- For the filling, simmer milk with sugar, whisk egg yolks with cocoa and coffee, then combine and cook until thickened. Cool completely before filling pastries.
- Whip heavy cream and use it to top éclairs before serving.
