Description

Experience the heavenly combination of coffee and pastry with Mocha Éclairs.   • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp instant coffee granules
  • 1 cup heavy cream
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 425°F (220°C). In a saucepan, heat water and butter until boiling. Stir in flour and mix until smooth.
  2. Allow the mixture to cool slightly, then add eggs one at a time, mixing until glossy.
  3. Pipe 4-inch logs onto parchment-lined baking sheets.
  4. Bake for 25-30 minutes or until golden brown; do not open the oven door during baking.
  5. For the filling, simmer milk with sugar, whisk egg yolks with cocoa and coffee, then combine and cook until thickened. Cool completely before filling pastries.
  6. Whip heavy cream and use it to top éclairs before serving.
