  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs (for topping)
  • 1 tsp paprika (for topping)

Instructions

  1. Cook the elbow macaroni in boiling salted water until al dente (about 7-8 minutes). Drain, reserving a bit of pasta water.
  2. In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute until golden. Gradually whisk in milk until smooth.
  3. Lower heat and mix in shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
  4. Combine drained macaroni with the cheese sauce, ensuring each piece is well coated. If too thick, add reserved pasta water gradually.
  5. Preheat oven to 350°F (175°C). Transfer mac and cheese to a baking dish. Mix breadcrumbs with paprika and sprinkle over the top.
  6. Bake for 20-25 minutes or until the top is golden brown and crispy.
