  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup grated carrots
  • 1/2 cup grated zucchini
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the all-purpose flour, whole wheat flour, baking soda, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the eggs, brown sugar, honey or maple syrup, vegetable oil, and applesauce until smooth.
  4. Gradually combine the wet ingredients into the dry mixture. Fold in the grated carrots and zucchini, along with optional nuts and dried fruit. Mix gently until just combined.
  5. Spoon batter into prepared muffin tins, filling each liner about two-thirds full.
  6. Bake for approximately 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Let cool on a wire rack before serving.
