- 1 cup mixed olives, pitted
- 2 tbsp capers
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 4 oz goat cheese, crumbled
- 2 tbsp extra virgin olive oil
- Fresh herbs (basil or parsley) – optional
Instructions
- In a food processor, combine olives, capers, garlic, lemon juice, and olive oil. Pulse until coarsely chopped.
- Slice the baguette into thick pieces and toast them lightly in a skillet over medium heat until golden.
- Spread the tapenade on one side of each toasted slice and top with crumbled goat cheese. Press slices together to create sandwiches.
